I love waffles, that being said my body does not love dairy. I don’t think I should be punished because I can’t breakdown dairy.
I WANT WAFFLES TOO!
After scouring the web and finding several egg free recipes, I decided to get creative. Thankfully, I had a waffle iron and a determination to have waffles. Immediately. Now, below you’ll find the blueberry vanilla recipe but if you’d like you can leave out the fresh fruit or add fruit to your batter like I did this past weekend.
Trust me, they’re delicious either way.
First you’ll need to grab these ingredients:
- 2 cups of all purpose flour
- 1/2 cup of sugar
- 1 tablespoon of baking powder
- 1 teaspoon of salt
- 1 1/2 cups of Silk Light Vanilla Almond milk
- 1 teaspoon of vanilla extract
- 1/2 cup of fresh fruit (blueberries are delicious)
**Recipe makes 6-8 waffles**
Combine in a large bowl all of your ingredients except for your fruit. I used a homemade vanilla extract which is a bit stronger but store bought works fine!
Stir until you have a smooth batter and then fold your fruit into the batter last.
Next, grab the no stick cooking spray. Now this is important
You must spray both sides of your waffle iron before you do each waffle!!!!
If you forget this step, welp, there goes your breakfast, or brunch, or dinner….I don’t judge.
Place your waffles on a cooling rack, if you have one, to avoid a soggy waffle; ew. Top with syrup or eat them plain, doesn’t matter just enjoy!
