If you follow me on Twitter or Instagram, you’ve probably heard me obsess over mini pizzas. These are my ultimate fave go to snack/meal/feed me now I’m starving food. They take just a few minutes to make, satisfy that pizza craving, and are so delicious I could cry, in fact I have one in the oven right now. I mean just look:
Ok, here are the things you need:
Zero Cal Butter Cooking Spray
Shredded Cheese (real or faux if faux go with Tofutti brand)
Spaghetti Sauce or Progresso Tomato Basil Soup (personal fave)
Thomas Corn English Muffins…I live on these.
First, preheat your oven to 350*. Next slice your corn muffin in half and toast in a regular toaster. Once it is lightly toasted, remove it and spray those beautiful nooks and crannies LIGHTLY with a zero cal butter cooking spray then take about a teaspoon of your spaghetti sauce or tomato basil soup and spread it, using a spoon, on each corn muffin until it is completely covered. Next take your baby spinach and completely cover the tomato sauce. Once you have the baby spinach down on both muffins, place a slice of tomato on top, it can be a thin slice or a slightly thicker piece of tomato depending on your preference. Finally, Spread a thin layer of cheese on top of the tomato and move your pizzas to a cookie sheet or piece of aluminum foil and place in the oven uncovered. Now here’s the tricky part, you want to cook your mini pizzas until the cheese has melted. Depending on your oven this could take anywhere from 5-7 minutes but keep a close eye on your pizzas! You don’t want them to burn! Let them cool for a few minutes and enjoy!
